Coffee beans are filled with hundreds of aromatic compounds that give coffee its characteristic flavour. These compounds are created during the roasting process when heat transforms raw green beans into the rich, caramel-brown beans we love.
As soon as the beans finish roasting, they begin a slow but steady process of degassing and oxidation:
● Degassing — Beans release carbon dioxide (CO₂) produced during roasting.
● Oxidation — Aromatic compounds react with oxygen in the air and gradually break down.
This is why time is not your coffee’s best friend — the longer roasted beans sit, the more flavour and aroma they lose.
Fresh Roast vs. “Shelf-Aged” Coffee
Pre-ground supermarket coffee often tastes flat or bitter because:

● Grinding exposes more surface area to oxygen, escalating flavour loss.

Freshly roasted beans need a short rest period to stabilise — usually 3 to 10 days after roasting depending on the roast profile.
After this peak window:
● Aromas start to fade within 2 to 4 weeks.
● Oils turn dull and bitterness may develop.
● CO₂ levels drop, affecting extraction and crema in espresso.
That’s why we roast in small batches — to ensure you receive coffee that’s well within its prime.
Tips to Keep Coffee Fresher for Longer
To get the most out of fresh roast:
● Store beans in an airtight, opaque container
● Keep away from light, heat, and humidity
● Grind right before brewing for maximum flavour
● Buy coffee in quantities you’ll finish within 2–3 weeks
Refrigerators and freezers? Not recommended — they cause condensation and flavour contamination.
